For these days, it’s great to have a few ideas up your sleeve to put a little spin on your old standbys, and that’s exactly what this Coconut Rice does.

The addition of coconut milk and a bit of brown sugar gives a little something special to your rice, making it a great addition to all your favorite meals (think anything Asian or even something spicy like barbacoa) and it only requires the additional effort of opening a can. Best of all, it reheats beautifully which is great for people like me who love leftovers.

Coconut Rice

Ingredients

  • 2 cups jasmine rice
  • 1 1/2 cups water
  • 1 cup canned, unsweetened coconut milk
  • 1 Tablespoon brown or coconut sugar
  • Salt to taste

Instructions

  1. Rinse and drain rice.
  2. In a medium saucepan over high heat, add all ingredients, stir, and bring to boil.
  3. When rice begins to boil reduce heat to low simmer and cover with lid.
  4. Simmer for 15 minutes before removing pot from heat and allowing to sit for ~10 minutes. Fluff with fork and serve immediately.
