Some people don’t like breakfast, I don’t understand those people. I love breakfast foods any time, day or night. And these waffles, ohhhh these waffles, they my friend are exceptionally scrumptious. I knew when I saw them on Joy’s blog they would be a home run, because she is pretty much amazing and so is everything she cooks. They are light and fluffy with just enough flavor to add a little something special, for someone a little special in your life (even if that someone is you!). Enjoy!

Banana Nut Waffles

Banana Nut Waffles  (Print Me)

Ingredients:
3 cups all-purpose flour
1 Tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
¼ cup packed brown sugar
⅔ cups canola or vegetable oil
4 large eggs
2 teaspoons vanilla extract
2 ½ cups buttermilk
½ – 1 cup mashed banana
¼ cup chopped walnuts/pecans

Directions:
Turn waffle iron on to preheat.

In a large bowl, whisk together flour, baking powder, baking soda, salt and brown sugar.

In a medium bowl, whisk together eggs, oil, vanilla extract buttermilk, bananas, and walnuts. Add the wet ingredients, all at once to the dry ingredients. Stir until just incorporated, trying not to over-mix the batter.

Cook waffles according to your waffle machine instructions and serve immediately.

To freeze: Allow waffles to cool completely before placing in ziplock bags and storing in the freezer. Gently reheat waffles in the toaster or toaster oven.
