Everyone here probably knows what a mimosa is (champagne & OJ), but if you are like me, you may have never heard of a peach bellini. The concept is the same but they are made with fresh ripe peaches. I’m here to say, move over mimosa, the bellini is here to stay! These would be amazing at a brunch or a bridal/baby shower, and also as a morning after a night of drinking beverage ;-). You will be seeing these ingredients used again VERY soon, if you follow me on Facebook or Twitter you may know why, if not I guess you will have to wait and see! In the mean time, throw some of these bad boys together and sit back and relax!

Peach Bellinis   (Print Me)

Ingredients:
3 small (or 2 large) ripe peaches – peeled, seeds removed and finely diced
1 tsp sugar
1 Tablespoon freshly squeezed lemon juice
1 Tbsp peach schnapps (optional, more or less to adjust sweetness)
1 bottle chilled champagne or prosecco sparkling wine

Directions:
In a small bowl mix the peaches and sugar and let sit for a few minutes. Add the lemon juice, and peach schnapps (if using) then stir to combine. Drop a couple of tablespoons of the mixture into the bottom of champagne flutes then slowly top with chilled champagne or sparking wine of your choice. Enjoy immediately.
