We recently just got back from a trip home to the midwest; and we were pleased to find our house weathered Hurricane Irene fine with only a few pieces of siding down. While I was at the grocery store restocking the refrigerator the sad fact hit me that all of my favorite ripe local fruits would soon be missing. Since summer is sadly drawing to a close, it’s all the more reason to enjoy a fresh summer salad while the days are still long. While I am glad to welcome a break from the humidity, I hope summer lingers a while longer. Here’s a simple recipe for a fruity dressing I threw together that will brighten up your favorite greens. Enjoy it while you can! 🙂

Strawberry Dressing
Strawberry Dressing   (Print Me)

Ingredients:
10 strawberries
3 Tbsp olive oil
2 Tbsp orange juice
1 Tbsp balsamic vinegar
1 tsp lemon juice
Pinch salt

Directions:
Place all ingredients in a blender or food processor and blend until dressing is smooth and the consistency you prefer. If you want to thin the dressing simply add more olive oil or orange juice.

Serve over your favorite salad.
