You didn’t seriously think I forgot about muffins, did you? Good, because these could easily become your next addiction. Blueberry and orange? you may say with your head cocked to one side. Yes. Blueberry and orange. This bread (which, of course, I made into muffins) has a cake like texture and a light, sweet flavor. Try these. Seriously. You can thank me later. ๐Ÿ™‚ Enjoy.

Blueberry Orange Bread

Blueberry Orange Bread (Print Me)

Ingredients:
2 tbsp butter
1/4 cup boiling water
1/2 cup orange juice
3 tsp grated orange rind
1 egg
1 cup sugar/splenda
2 cups flour (I used white wheat)
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup blueberries, fresh or frozen
2 Tbsp honey
2 Tbsp orange juice

Directions:
Preheat your oven to 325ยบ and grease a bread/ muffin pan. Melt the butter in boiling water; remove from heat and add the orange juice and rind, set aside. In a medium bowl whisk together the flour, baking powder, baking soda, and salt. In a large bowl beat the egg with the sugar until light and fluffy. Slowly mix the orange juice mixture into the sugar, then add the flour stirring just until blended. Fold in the blueberries. Bake for 60-70 minutes (for bread) or 20 – 35 minutes for muffins (depending on size), or until a toothpick inserted in the middle of the bread comes out clean. While the bread is still hot, whisk together 2 tbsp of honey and 2 tbsp of orange juice; pour the mixture evenly over the warm bread.
