I have been craving pumpkin infused goodies since the first hint of cool breeze, I finally took advantage of a morning off and made these pumpkin muffins. They were very easy to make and I made them as healthy as possible, so there is no guilt involved while eating them. The texture was great and the flavor was almost there, I feel like they were lacking a bit but I think it’s a great base recipe to work off of and I will be revisiting these again soon. So have some fun with these, you will be glad you did.

Light Pumpkin Muffins

Light Pumpkin Muffins   (Print Me)

Yield: 12 regular or 6 large muffins

Ingredients:
2 cups white whole wheat flour
2 tbsp flax seed
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/4 cup packed brown sugar
1/2 cup splenda
3 tbsp agave nectar (could also use honey or maple syrup)
1/4 cup unsweetened applesauce
2 large eggs
1 cup canned pumpkin
1 tsp vanilla extract
3/4 cup skim milk

Directions:
Preheat oven to 400º F. Using muffin liners or non-stick cooking spray prepare a 12-cup muffin pan (or 6-cup for large muffins). In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg then set aside. In a large bowl, whisk the sugar, agave nectar, oil and eggs until combined; then whisk in the pumpkin and vanilla. Add the flour mixture in 2 batches, alternating with the milk whisking until just combined.  Pour the batter into the prepared muffin pan and tap the pan on the counter a few times to remove any air bubbles. Bake for 17-20 minutes (about 25 minutes for large muffins) or until a toothpick inserted in the center of the muffins comes out clean. Let the muffins cool on a wire rack for 15 minutes before removing them to completely cool on the rack.
