Green beans are definitely my favorite veggie, they have been since I was a kid. However, these days I’m less into the canned version and more into the fresh. And these beans are great, the flavor is on point and they are so easy to make. Roasting vegetables is less about the length of time they are in the oven and more about how they look/feel so you need to watch them in the last few minutes of cooking. You will want the vegetables to be slightly browned and softened so they have the perfect texture. These are sure to please even the veggie haters out there!

Garlic Roasted Green Beans

Garlic Roasted Green Beans

Ingredients:
1 1/2 pounds fresh green beans
2 tbsp olive oil
2 tablespoons minced garlic
1 tsp sea salt (or regular salt)
1/2 tsp fresh ground black pepper

Directions:
Preheat your oven to 425 degrees. Rinse the green beans and trim the ends. In a large bowl or bag toss the beans with the oil, garlic, salt and pepper then spread them evenly on a parchment lined baking sheet. Roast the beans, stirring once halfway through, until lightly caramelized and crisp tender, around 12 to 15 minutes. Enjoy 🙂
